* 3 to 7 cups watermelon chunks
* 1/2 to 1 cup sweetener
* 1 cup lemon juice
* 1 cup gin or vodka (optional)
* 3 Tbsp grenadine
1. Cut a small seedless watermelon in half, lengthwise or crosswise. Take one of the halves, then use a spoon or a melon baller to scoop out chunks of its fruit. Make enough for 3 to 7 cups. Feel free to use the other half if you're making more watermelon lemonade, or refrigerate it for future use.
2. Puree the watermelon chunks in a food processor until smooth. Strain the watermelon juice through a sieve and into a large bowl to remove any pulp. Transfer the juice into a large pitcher.
3. Stir 1/2 to 1 cup of sweetener into the pitcher. Depending on your preference, this can be honey or sugar. You can also mix 3 cups of water and 1 1/2 to 2 cups of sugar to form a simple syrup.
4. Pour 1 cup of lemon juice and 1 1/2 to 2 cups of cold water into the pitcher. Then, add a cup of gin or vodka and 3 Tbsp grenadine. Stir all of the ingredients until they are blended. Cover the pitcher of watermelon lemonade and refrigerate it until cold.
* 3/4 cup water
* 1/2 cup sugar
* 1 (3-inch) rosemary sprig
* 2 ripe peeled peaches, cut into 1-inch pieces
* 1 (750-milliliter) bottle Champagne or sparkling wine, chilled
Preparation
1. Combine first 3 ingredients in a small saucepan; bring to a boil. Remove from heat; cool to room temperature. Strain rosemary syrup in a sieve over a bowl; discard solids. Cover and chill at least 1 hour.
2. Place rosemary syrup and peaches in a blender, and process until smooth. Strain mixture through a sieve over a bowl; cover and chill at least 4 hours. Spoon about 2 tablespoons peach syrup into each of 8 Champagne flutes, and top each serving with about 1/3 cup Champagne.
